Ingredients
- 2 lbs of chicken
- 1 lb of spinach
- 4 ounces of original cream cheese
- 4 tablespoons of ricotta
- 1 cup of mozzarella cheese
- 1lb of mushrooms-sliced
- Butter or Olive Oil
Instructions
- Preheat oven at 400 degrees, In frying pan saute mushrooms, after mushrooms are sauteed, Wilt spinach, after mushrooms and spinach are cooked, lower temperature and add cream cheese. Allow it to melt and then add in ricotta. In a shallow pan, arrange the chicken and top with cream cheese/ricotta/mushroom/spinach mixture. Cook in oven uncovered for 25 to 35 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. 10 minutes before the chicken is finished top with mozzarella cheese and finish in oven.
