Michael Symon Knives from Ergo Chef

I am a GIGANTIC fan of Iron Chef Michael Symon so when Ergo Chef agreed to send me some knives from his collection I was blown away! I say this because I like to think of myself as an amateur chef and the fact I would have the opportunity to try out knives designed by Michael Symon made me feel really excited.

Ergo Chef all started with Scott Staib and his frustration with tendonitis and carpal tunnel syndrome. He recruited his engineer brother Mike and they set out to craft a completely new type of knife, they studied how a conventional knife fits in a chef’s hand, the movement of a chef’s wrist and hand during chopping and the angle at which a knife hits the cutting board and that helped them craft that new knife. After using the newly designed knife, Scott’s persistent tendonitis and carpal tunnel symptoms disappeared. He created 50 prototypes of the knives and sent them to professional chefs, student chefs and culinary professors across the country. The response was overwhelmingly positive and that’s the story of Ergo Chef!

The Michael Symon collection contains a variety of different knives including different sized chef knives, a vegetable cleaver, serrated utility knife and a few different sets.

I was sent the 7 Inch Vegetable Cleaver and 6 Inch Chef Knife.

The knives arrived in simple yet elegant black boxes which for some silly reason made me feel like a real chef.

The 7-inch Vegetable Cleaver was designed for chopping and scooping. The sturdy yet thin blade is .070 inches thick by 3.440 inches tall by 7 inches long which allows you to scoop up food with ease. The knife is made of high carbon German Stainless steel for durability and one of the world’s strongest handle materials G10 fiberglass resin which makes this knife SUPER durable.

Chef Symon’s Knife Tip:

For good control, grip the base of the knife blade, just in front of the handle, placing your thumb and index finger on my MS logo as a starting point. Wrap your remaining three fingers around the handle of the knife. Now You’re ready to prep.  Enjoy!

The 6-inch Chef Knife is referred to as “the little workhorse in the kitchen”. This smaller and lighter knife is perfect for those who are intimidated by larger knives and which makes it perfect for beginner chef while seasoned chefs like to use it for small tasks, it is PERFECT for chopping smaller veggies and proteins. The sturdy blade is .090 inches thick by 1.7 inches wide by 6 inches long which cut through the toughest veggies with ease. The handle is .725 inches thick by .980 inches wide in the middle by 4.8 inches long including the bolster. This knife is also made with  high carbon German Stainless steel for durability and one of the world’s strongest handle materials G10 fiberglass resin. This was my favorite knife out of the two because I found it to be really versatile and I felt confident using it! It also fit PERFECTLY in my hand which made for comfortable cutting.
