Sorry, it took me so long to get this recipe up, I pretty much winged it this time so I had to sit down and figure out the measurements and amount of ingredients I used.
Bacon, Broccoli, Potato Corn Chowder
Ingredients:
2 tablespoons Butter
Olive Oil
1 Onion Diced
1 lb bacon
1 bag of frozen broccoli florets
1 tablespoon minced garlic
1/2 cup all-purpose flour
5 cups of chicken or vegetable broth
1/2 mushrooms, chopped
2 cups half and half
5 potatoes diced
5 cans of corn drained
Salt and pepper
Mrs.Dash Original
1) Heat butter and 1 tablespoon of olive oil in a pan over medium heat, at this time, be sure to heat the oven to 400 degrees, place bacon on an oven-safe cookie sheet and bake for 20 minutes.
2) Add Mushrooms, Onion, and Garlic to the pan, cook until soft, add the flour followed by the broth, half and half, and broccoli and potatoes.
3) Bring to a boil, allow to boil for 10 minutes, drain corn and add. At this step, I add all the seasonings
4) Turn down the heat and let simmer for 10 minutes, chop bacon into bits, serve in soup or use as a garnish on top and enjoy!!
