Baked Potato Bake featured Hood Sour Cream #Sponsored

I LOVE Hood Sour Cream! Its the ONLY brand I will use for my sour cream needs. Its a staple in our household and is ALWAYS on hand. I use it for everything, dips, toppings, and more. So when Hood Sour Cream sent me some coupons, I had no doubt in my mind how to use it! I LOVE twice baked potatoes but they are SUCH a pain to make and so time consuming. This Baked Potato Bake is easy and fast to make.

 In my household, comfort food is very common, I LOVE my cast iron pans and use them to cook comfort food such as corn bread all the time. So when this challenge came up I just HAD to use my cast iron.
Hood Sour Cream was nice enough to send me along a few coupons to create a recipe using their great product. Hood is actually a little hard to find near me(I live in Southern VT) because most stores carry a compeditor because they are a Vermont based company, but I am always able to find Hood at my local Walmart.
I decided to go with this recipe for a few reasons, I love potatoes and they are something that we ALWAYS have on hand, they are cheap and good, and second because i’ve been DYING to use my cast iron pan for a casserole and I felt this was the perfect time! I season my cast iron with coconut oil and the baked potato bake came RIGHT out of the pan, there was literally no clean up other then wiping out the pan. The coconut oil also added a nice crust to the bottom of the potatoes.
Baked Potato Bake
 
Ingredients: 
One large container of Hood Sour Cream
1 lb of potatoes
2 tablespoons milk
4 tablespoons butter
1 lb of Bacon
2 packages of mozzarella cheese
Mrs.Dash
1) Dice potatoes and boil,while they are boiling, either fry or bake, bacon(to bake, preheat oven to 350 and bake for 10-15 minutes), once cooked remove from oven and crumble
2) Drain potatoes, add milk and butter, mash.
3) while potatoes are still hot, add sour cream and bacon, mix well.
4) add potato mixture into pan, top with cheese, and bake for 10 minutes on 350.
