So I am going to be starting a new section on my blog, that is filled with complete dinner ideas!! My first complete dinner is for crock pot chicken and rice, complete with cornbread and honey butter.I am going to break it down piece by piece!
Cornbread with Honey Butter
Cornbread:
I personally used a pre-made cornbread mix but here is a simple and easy recipe I tend to follow.
1 1/4 cup all purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 teaspoon baking powder
1/2 tsp salt
1 cup milk
1/4 cup vegetable oil
1 egg beaten
Heat oven at 400 degrees, grease pan(I use my metal bread pan), combine ingredients until wet, pour in pan. bake 20 to 25 minutes or until golden brown!
Honey Butter:
3/4 cup of butter, room temperature
1/4 cup of honey
In Bowl, combine ingredients until mixed and enjoy on cornbread!
Crockpot Chicken(With Dumplings):
Five Chicken Breasts
Two Cans Cream of Chicken(I Use the big cans)
One Can Cream of Mushroom
NOTE: I use one can of water to dilute the flavor a little
Vegetables
Mrs.Dash Original
*I didnt include the vegetables I used because I only used carrots, this was a throw together on a night I didnt have much to make, but this recipe was so good its pretty universal, I suggest using carrots, potatoes and celery!*
Cut chicken breast into small chunks, place in crockpot, open cans of cream of chicken and mushroom, Pour in crockpot to cover chicken, fill with one can of water. Place vegetables in, stir, Let cook for 2-3 hours. Top with dumplings, let cook for 15 minutes or until dumplings appear cooked. Sprinkle with Mrs.Dash and enjoy!!
Dumplings:
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoon butter
3/4 cup milk
Combine ingredients and drop into crockpot mixture
I prepared some white rice on the side in my rice cooker, and mixed in some gravy from the crockpot mixture while it cooked
Finished YUMMY!!!
