My father worked as a chef for years, mostly in diners and worked under a very talented chef who with help from my father put a sandwich called the “Country Chicken Sandwich” on the menu. It was a hit and my dad said at a lunch peak they would sell well over 300.
I recently took part in the Healthy Solutions Spice Blends 2015 Blogger Recipe Challenge and I just KNEW I had to make my dads famous sandwich.
Ingredients:
Makes 4 sandwiches
4 pieces Boneless Chicken(I always buy the Perdue pre wrapped chicken its much easier but you can buy boneless chicken breast and pound it out yourself)
1 lb of thick cut bacon(I used North Country Smokehouse Bacon out of Claremont NH)
1 box of Fish Fry
1 egg
1 package of ENCRUSTED HADDOCK seasoning from Healthy Solutions.
Bulky Rolls
Lettuce
Tomato
Cheese(I prefer to use Swiss)
Mayo(I use Garlic Just Mayo by Hampton Creek)
Oil for frying
1) Preheat oven at 400F degrees, place bacon on baking sheet so its not over lapping. Bake in oven for 15-20 minutes or until browned.
2) In large frying pan, heat oil to 350 degrees, while oil is heating, crack an egg in a bowl and whisk, mix fish fry and package of encrusted haddock seasoning in a low dish. Coat chicken well with fish fry mixture and fry chicken until golden brown. Note* When using thin chicken it does not take much for it to get over cooked so watch carefully*
3) Toast Bun in pan with butter, assemble sandwich with chicken, lettuce, tomato, bacon, mayo and cheese.
