Mashed Potato Salad
Pictured above with Honey Mustard Chicken.
Ingredients:
2 pounds of potatos(I always make it in bulk)
1 1/2 of mayo
1/2 cup of mustard
6 eggs
(You can add anything you would normally to regular potato salad, all you are really doing differently is mashing it slightly)
Directions:
Chop and cook potatoes, Drain when they are soft. While still hot, put into a mixing bowl and mash slightly with a hand masher(DO NOT USE A MIXER), Add Mayo, Mustard and Eggs.
I like to add in celery to for an extra crunch! Thanks for sharing!
I LOVE Celery in my potato salad, the hubby is picky though LOL I always am sure to slice up a little celery to add into my portion

I never heard of mashing them slightly before. I will have to try it. We make potato salad all the time. It should be a good switch up.
