I love pasta! It’s one of my favorite foods. I could honestly eat it for lunch and dinner, every single day. I love all pasta, whether it’s spaghetti, penne, or linguine. Pasta is so versatile and the sauces and ingredients possibilities are endless.

Sfoglini((sfo-lee-nee) uses Italian techniques and North American ingredients to make high-quality pasta. They use bronze dies and plates that give their pasta a rough texture that helps pasta stick. They then slow dry the pasta at a low temperature to preserve flavor and nutrients. The first pasta I tried was their Organic Semolina Trumpets. I made a quick dinner with shrimp, mushrooms, and dill in a cream sauce. It was so good and I love how the trumpets hold the sauce. My toddler liked this dish too and it was really simple to make. I made a very simple cheese sauce using milk, butter, and multiple times a cheese.

I was really interested to learn about Cascatelli. I enjoyed reading the story behind it and for those interested, it comes from the mind of two-time James Beard Award winner Dan Pashman, creator and host of The Sporkful food podcast. Cascatelli is Italian for “waterfalls” and is designed for sauceability, formability, and toothsinkability.
I gave the Whole Grain Reginetti to my mother who said it was some of the best pasta she has ever had! You can easily tell the difference between low-quality dried pasta and Sfoglini Pasta.
