In Vermont, Cabot is really the ONLY cheese that exists….Nothing else EVER comes into my household unless it’s a cheese that Cabot doesn’t make, so when I was recruited by Hormel to make a recipe that reflected my state I HAD to make a Mac and Cheese using Cabot Cheese.
Chili Mac is INCREDIBLY easy to make!

Ingredients
- 1lb of pasta(I prefer to use corkscrew shaped)
- 1 oz block of Vermont Sharp Cabot Cheese
- 1 oz block of Monterey Jack Cabot Cheese
- 1 oz block of Colby Jack Cabot Cheese
- 1 can of HORMEL® Chili No Beans
- 2 bags of Doritos(I choose to go with Nacho Cheese and Cool Ranch)(I start by making the topping 1 cup at a time, it really depends on how much topping you like to how much you make so play around with it)
- 2 tablespoons butter
- 1/2 cup of milk
Instructions
- Cook Pasta fully and drain, while pasta is cooking in separate pan, add milk and butter, slowly add chopped or shredded cheese, I prefer to do it one cheese at a time but you can mix it all in together.
- In food processor or blender combine 1 cup of Nacho Cheese and 1 cup of Cool Ranch Doritos, blend.
- Once cheese is melted, turn off stove and add chili to the mixture and stir. Once stirred thoroughly pour cheese over pasta and stir. Top with Doritos mixture and serve.
