Quick Sausage Dinner with Southside Market & Barbeque

I am always looking for quick and easy dinner ideas! I recently came across Southside Market & Barbeque and they were kind enough to send me some of their rope sausages.

History:

In 1882, William Moon started Southside Market in Elgin, TX. He used a horse-drawn wagon to carry meat into town and sold it door-to-door. In 1886, he opened his first brick-and-mortar store and in 1908 he sold the business to Lee Wilson who continued to serve the Elgin community. Over the years, Southside Market changed hands and expanded.

Today:

Today, Southside Market & Barbeque has four restaurant locations in Texas including Elgin, Austin, Bastrop, and Hutto. They also ship their products nationwide from their Online Store. Their products are still made following the same authentic methods that the founder, William Moon used including smoking low and slow over real Texas post oak wood.

Products:

Southside Market & Barbeque offers smoked sausages and meats. Their Sausage Slammers are a huge hit and are cheese-filled jalapenos, wrapped in sausage and bacon. Other great products they sell are seasonings and hot sauces which make wonderful gifts!

I received two packages of their Fresh Original Beef Rope Sausage. They arrived fresh and well packaged, I decided to freeze them as I didn’t know what I wanted to do with them immediately. I finally decided to cook in a cast iron pan in the oven.

About The Product:

Fresh Original Beef Rope Sausage also known as “Elgin Hot Sausage” or simply “Hot Guts”, are raw ropes that measure approximately 44-48 inches long and weigh 2 lbs. They are made with beef, seasoned with black pepper, and use a natural pork casing.

You can purchase it in 2 packages for $50 or 4 packages for $80.

Southside Market

There are multiple ways you can cook the Fresh Original Beef Rope Sausage including smoking, grilling, sautéing it, etc. I decided to cook it in the oven but their website lists directions on how to cook it. I love serving potatoes with sausage, I feel like it’s such a great pairing! The sausage looks a little undercooked in the picture but it’s because of the bad lighting in my kitchen.

The sausage was super flavorful and I love sausage that has a nice crisp crunch due to the casing and these do! I plan to smoke the other 2 lbs and can’t wait to see how it comes out!
