Seafood Scampi Featuring Harvest of the Sea

I love seafood and I love pasta so I decided to throw together a quick seafood scampi for lunch today.

I recently was sent a bag of seafood medley by Harvest of the Sea and at first, I was unsure what to do with it but I decided to go simple yet classy.

What is Scampi?

Scampi refers to different things depending on what region you live in. In the UK, Scampi refers to langoustine aka “Norway Lobsters” and they belong to the lobster family. In most countries though, langoustines are replaced with shrimps, prawns, or other seafood. The one thing that is the same though is the sauce it’s served in which consists of butter, olive oil, white wine, garlic, red pepper flakes, and lemon juice.

Seafood Scampi

Now, because I’ve never actually made scampi at home, I decided to do some research both on the internet and in my cookbooks. Many recipes are a bit fancy, some call for white wine. Some are super simple and are served over veggie noodles. I opted to use fettuccine and decided on a simple approach. Now, I struggle with portion sizing(I mean who doesnt!?!) so I sorta winged this recipe and I am unsure of the calories and such. I was able to have some for both lunch and dinner(I’m the only one who eats seafood in the house and the baby did snack on some with me).

As I said, this recipe is super simple and I’m not the best with measurements, ratios and etc. It was still super tasty and super easy to make!
