Steph’s Corn Chowder with Home Made Saltines

Steph’s Corn Chowder
Makes one HUGE pot
1 lb of bacon(I use apple smoked)
2 onions(I use frozen to save time)
3 pieces of Garlic-sliced
1 bag of spinach(I use fresh)
1 package of mushrooms-sliced
5 cans of corn drained
6 potatoes
6 cups of half and half
6 cups of chicken stock or broth
2 cups of flour
6 cups of water
2 tablespoons of butter
olive oil
1 stalk of celery

Place Bacon on baking sheet, heat oven to 350, Cook until desired color(I cook mine really dark)
In large frying pan heat olive oil, add sliced celery,garlic mushrooms, onions, cook until tender, add spinach, until wilted
While veggies are cooking, In a Large pot add half and half, water, butter and flour, heat, Add potatoes(make sure they are cut small), Cook for 15 minutes or until potatoes are tender, Add Corn, Add Veggies(I don’t drain it for more added flavor)
Remove bacon, Slice up, Add. Simmer 15 Minutes

Home Made Saltines:
1 cup all purpose flour
1 to 2 tablespoons butter

4 to 8 tablespoons water
1/2 teaspoon salt

Mix ingredients in a bowl, mix until turns into a moist ball, roll out onto cookie sheet, cook 400 for 10 minutes
