Tater Tot Casserole:
Tater Tot Casserole is a dish that a good friend of mine, Kim made for me once and I have since adapted it over the years. My kids LOVE it and it’s always a huge hit! This is just ONE variation that I have decided to share. This post is originally from 2012 and I am still making varieties of it today. This recipe used items I had in the fridge but contains the basic ingredients such as tater tots, cream of blank soup and cheese.
Ingredients
- 1 lb. ground beef
- 1/2 a cup Scallions, Chopped(Onions work too, I had Scallions that needed to be used up though)
- 1 bag of Frozen Tatter tots
- 1 can of Cream of Mushroom Soup
- 2 red peppers, Chopped
- Few Pinches of Rosemary, Salt, Pepper, Garlic Salt, Onion Powder
- 1 cup of Shredded Cheese(I used a Mexican Blend)
- 1/2 cup of Milk
- (This Recipe is VERY Versatile, I change it up almost every time I make it)
Instructions
- Preheat oven at 350°F
- 1)Brown Ground Beef,Red Peppers and Scallions(Or Onions) In Pan
- 2) While the Mixture is cooking, Mix Mushroom Soup,Milk and Seasoning in Large bowl
- 3) Drain mixture of Ground Beef, Rep Peppers and Scallions(or Onions) and transfer to the bottom of a baking dish, Spread Tatter Tots on top of Meat Mixture, Pour The Soup Mixture over top and Fold into the rest of the mixture
- 4) Top the whole Casserole with Cheese
- 5) Bake for 35-45 minutes
